Skinny Cape Cod

LOL, remember last week when I said I was going to get to a MWF posting schedule?

Since yesterday was a holiday, I figured I would give you all a quick bonus post—and I’ll have a new post lined up for you tomorrow, too!

If you follow me on Instagram, you know that I absolutely love Instacart. My love of Instacarts stems from my hatred of grocery shopping. There just never seems to be a good time to do that dreadful chore—after work, I’m hitting up the gym, and since I don’t drive to work, it’s an inconvenience to get to the store. On the weekends, the last thing I want to do is fight the Sunday night grocery store crowd—especially when the Kardashians are in season ;].

So lately, I’ve been using Instacart to get my groceries delivered to my front door. Time is money, after all! Once you make an account (it’s free—no membership required!) on Instacart’s website or mobile app, all you have to do is select your preferred store, add your groceries/household items to your cart, and select a delivery time window that works for you. Here in Arlington, Instacart has all my favorite stores on deck—Giant, Whole Foods, Safeway, Costco (no membership required!), Shoppers, Harris Teeter, CVS. And, delivery times go as late as 9-10pm, which is perfect for my busy weeknights.

Searching the Instacart website/app for everything on my list is easy—they even list store brand items!—and you can mark your favorite products so they are quick to find later. You can also leave notes for your shopper and mark a replacement for them to grab if the store is out-of-stock of the requested item.

I spent this past weekend in Boston for a wedding of a dear former coworker—I had the best time celebrating the happy couple with their families and friends. I flew home on Sunday afternoon, scheduled an Instacart delivery for Sunday night, and made this delicious ‘skinny’ Cape Cod for Labor Day Monday. This recipe was our drink of choice at the wedding this weekend, so I wanted to share with all of you. Here’s the recipe for a ‘skinny’ Cape Code—the regular recipe is essentially a vodka cranberry with a lime garnish! It’s also super easy to make, but saves you so many of the calories—and the hangover since there’s so much less sugar.

INGREDIENTS / PER SERVING

  • 1.5 ounces vodka
  • 6 ounces Cranberry Lime Seltzer—I used this brand
  • Splash of cranberry juice—optional, but I like it for the fun color!
  • Lime wedge for garnish

DIRECTIONS 

  1. Place ice in bottom of a rocks glass, then pour vodka on top.
  2. Add chilled cranberry lime seltzer. Splash with cranberry juice if desired.
  3. Garnish with lime and enjoy!
